How to Reduce Food Waste: What Works at Home, in Shops and Across the Food System

Reducing food waste sounds like a problem for bins, composters and recycling plants. The most effective interventions happen earlier.

They happen when a farmer avoids harvest losses, a supermarket orders more accurately, a restaurant cooks smaller batches and a household uses what it already owns before buying more.

The central principle is prevention.

Once food has been grown, processed, chilled, transported and prepared, much of its environmental and financial cost has already occurred. Keeping edible food edible usually preserves more value than recovering energy or nutrients after it becomes waste.

Start by knowing what is actually being wasted

People are poor at estimating repeated small losses.

A few spoonfuls of rice, half a loaf, wilted vegetables and occasional leftovers may not feel significant on any one day. Over months, they add up.

For households, a simple one- or two-week waste diary can reveal patterns. Note what is discarded, roughly how much, and why: spoiled, overcooked, forgotten, disliked, unsafe, or left after serving.

Businesses can use weighing systems, kitchen audits and sales data to do the same at larger scale.

Measurement matters because different causes require different solutions. A household that wastes bread needs a different intervention from a restaurant throwing away buffet food or a retailer over-ordering fresh produce.

Plan meals, but leave room for reality

Meal planning is useful when it reduces unnecessary buying rather than creating a rigid schedule that itself generates waste.

Check the refrigerator, freezer and cupboards before shopping. Build some meals around ingredients that need to be used first. Keep one flexible meal slot for leftovers or changing plans.

A shopping list helps, but quantities matter. Buying a large discounted pack saves money only if it is eaten or safely stored.

For perishable foods, smaller and more frequent purchases can reduce spoilage where convenient. For staples with long shelf lives, buying in bulk may still make sense.

The objective is not minimalist shopping. It is matching purchases to realistic consumption.

Make food visible

A significant amount of household waste comes from forgetting what is already available.

Refrigerator organisation can help. Keep foods that need to be eaten soon in a visible area. Move older items forward when adding new ones. Use clear containers for leftovers when possible and label cooked food with the date it was prepared.

Freezers are particularly valuable because they extend the usable life of bread, cooked meals and many ingredients.

But freezing only works if food is eventually used. A freezer packed with unlabelled containers can become long-term storage for forgotten food.

An occasional 'use-it-up' meal creates space and turns small quantities into soups, curries, stir-fries, sandwiches, omelettes or mixed dishes where culturally appropriate.

Understand date labels

Date labels are a major source of confusion because terminology differs among countries.

In many regulatory systems, one category of label relates to food safety and another to quality. A safety-related 'use by' date should be followed as required by local guidance. A 'best before' style date often indicates quality rather than an automatic safety cut-off.

Consumers should not rely on a universal internet rule because food type, packaging, storage temperature and national regulation differ.

Governments and retailers can help by simplifying labels and educating consumers on what each term means.

The safest general principle is to follow local food-safety guidance while avoiding the unnecessary disposal of products whose label refers only to quality.

Serve smaller portions first

Food left on a serving dish can often be stored safely. Food mixed on individual plates may be harder to reuse.

Serving slightly smaller first portions and allowing seconds can reduce plate waste without restricting how much people ultimately eat.

This approach is especially useful in cafeterias, hotels and events where serving sizes are standardised for people with different appetites.

Restaurants can offer multiple portion sizes or make side dishes optional. Buffets can use smaller serving trays replenished more frequently instead of displaying large quantities that must later be discarded.

Portion control in this context is a waste-prevention tool, not a diet rule.

Learn to use leftovers safely

Leftovers are one of the easiest places to prevent waste because the food has already been purchased and prepared.

Cool and refrigerate leftovers promptly according to local food-safety recommendations. Store them in suitable containers and use them within the advised period. Reheat appropriately for the food involved.

The practical problem is often not willingness but memory.

Designating a visible shelf or planning one leftovers meal each week can prevent cooked food from disappearing into the back of the refrigerator.

For families with different schedules, freezing individual portions can be more realistic than expecting everyone to eat the same leftover meal the next day.

Buy imperfect produce when quality is acceptable

Cosmetic standards can encourage rejection of fruits and vegetables that are safe to eat but irregular in shape, size or colour.

Retail programmes that sell cosmetically imperfect produce can create a market for some of this food.

But the issue needs nuance. Not all produce outside retail specifications would otherwise be wasted; it may already have markets in processing, animal feed or other uses. Marketing 'ugly food' is therefore not a complete solution.

More flexible purchasing standards, secondary markets and processing channels can help ensure that edible crops have an outlet before waste occurs.

Retailers need better forecasting and pricing

Stores balance two risks: empty shelves can lose sales, while excess stock can spoil.

Better demand forecasting uses sales history, weather, holidays, promotions and local patterns to order more accurately. Dynamic markdowns can reduce the price of products approaching quality or safety limits where regulations allow.

Package size matters too. Offering smaller packs can help one-person or small households buy the quantity they can use.

Retailers can also improve storage, cold-chain management and supplier coordination to reduce losses before products reach shelves.

The most effective programmes measure waste by product category so managers can see which items repeatedly become surplus.

Food-service waste has kitchen and customer components

Restaurants, hotels, hospitals, schools and workplace canteens may waste food during preparation, storage, serving and after meals.

Kitchen waste can be reduced through careful trimming, batch cooking, inventory rotation and menu planning that uses ingredients across several dishes.

Customer waste responds to portion choice, tray design, serving style and whether diners can take leftovers safely.

Forecasting is especially important for buffets and catered events, where uncertainty often leads operators to prepare too much to avoid running out.

Contracts can also be redesigned so success is not measured by visible excess.

Redistribution should follow prevention

When safe edible surplus cannot be sold, donation or redistribution can keep it in the human food chain.

This requires logistics: rapid collection, suitable storage, traceability, food-safety protocols and organisations capable of matching surplus with demand.

Liability rules, tax incentives and clear donation standards can either support or obstruct these systems depending on the country.

Redistribution is valuable, but it should not become an excuse for chronic overproduction. A system that routinely creates surplus and then depends on charities to move it is less efficient than one that forecasts demand well in the first place.

Governments can make waste visible and accountable

UNEP's Food Waste Index emphasises measurement because countries cannot manage what they do not track.

National baselines can identify the largest sectors. Public reporting can create accountability. Education can clarify date labels and storage practices. Procurement rules can help schools, hospitals and other public institutions reduce waste.

Waste collection policy matters too. Separate organic collection can improve composting or anaerobic digestion for unavoidable scraps, but downstream treatment should complement prevention rather than replace it.

SDG target 12.3 gives countries a shared objective: halve per-capita global food waste at retail and consumer levels by 2030 and reduce losses along production and supply chains.

Farmers and supply chains need different tools

Food lost before retail often reflects storage, transport and market constraints rather than consumer behaviour.

Improved harvesting practices, drying, cold storage, pest control, roads, packaging and market access can reduce losses. Digital information can help farmers match harvest timing to buyers. Processing can create markets for products that would otherwise spoil quickly.

The highest-priority investment differs by region and crop.

In one place, refrigerated transport may be the bottleneck. In another, moisture control for grain storage may matter more. Food-loss policy is therefore an infrastructure problem as much as an awareness problem.

Compost unavoidable scraps, not preventable meals

Peels, bones, coffee grounds and other unavoidable residues still need responsible management.

Composting can return some organic matter and nutrients to soil. Anaerobic digestion can produce biogas and digestate. Other residues may have approved feed or industrial uses.

These options are preferable to unmanaged dumping, but they occur after the food hierarchy's most valuable opportunity has passed.

A meal that never needed to be produced saves more resources than a meal that is produced and then composted.

The most effective strategy is a chain of small controls

Food waste does not have one cause and will not have one solution.

At home, planning, visibility, storage, safe use of leftovers and realistic portions reduce avoidable waste. In businesses, forecasting, inventory control and measured waste data are powerful. Across supply chains, better storage and logistics prevent losses before retail. Governments can clarify labels, improve data, enable redistribution and build appropriate organics treatment.

The common principle is simple: keep edible food doing what it was produced to do - feed people - for as long as safely possible.
